Run by Anna and Mario Sarale, heirs of the hundred-years-old dairy farm started by their grandparents, La Bottera dairy remains true to the typical cheese methods of the Piedmont Region. This artisan cheese owes its names to Monte Viso, a marvelous peak not too far from the dairy, and it is still produced following the traditional cheese-making process. It is a mild blue cheese with a delicate and melt-in-your-mouth texture and a mild flavor. For this reason Blu del Monviso is perfect for a dessert cheese plate.
